Treacle Toffee Roasted Bananas With Rum Whipped Cream

Ingredients

  • 1tbsp soft butter
  • 1tbsp golden syrup
  • 1tsp treacle
  • 1tbsp muscovado sugar
  • 2 bananas
  • 100g double cream
  • 25ml rum

Instructions

Method:

  1. Preheat the oven to 220°c / 200°c Fan / 428°F/ Gas Mark 6.
  2. In a bowl mix together the butter, golden syrup, treacle and sugar.
  3. Cut a deep opening into each banana and spread the butter mix into the cut.
  4. Place the two bananas onto a parchment lined baking tray and bake in the oven for 15 minutes.
  5. Softly whip some double cream and add the rum.
  6. Open the cooked banana and serve with a dollop of rum whipped cream.

Chef’s Tip:
To flambé the banana, warm some rum in a saucepan or microwave and drizzle over the open banana and carefully light with a lighter or match before you serve with the whipped cream.
