The Mann Family’s “Sunday Toast”

Ingredients

  • 1 tin tuna chunks in brine
  • 1/4 red onion, finely diced
  • 2 tomatoes skinned, deseeded and finely diced
  • 1 pickled gherkin, finely diced
  • 1 red pepper, finely diced
  • 1tbsp sweetcorn
  • 1tsp capers (optional)
  • 1tbsp mayonnaise or salad cream if you aren’t using pickled gherkins
  • 1tbsp tomato ketchup
  • Salt and pepper to taste
  • 2 slices brown or white toast
  • Extra mature cheddar, grated

Instructions

Method:

  1. Preheat your grill to medium hot.
  2. Apart from the toast and cheese, mix all the ingredients together in a bowl and season to taste.
  3. Place the mix onto a slice of toast and cover with a generous scattering of grated cheddar, try to cover the edges of the toast as they can catch under the grill.
  4. Grill until the cheese is bubbling and starts to brown
  5. Rest for 1 minute before eating.
