Slow Cooker Chipotle Sausage Chilli
Ingredients
- 1 tbsp olive oil
- 8 Booths chipotle sausages
- 1 apple,chopped
- 1 red onion, diced
- 2 carrots, diced
- 2 celery sticks, sliced
- 1 tsp chilli powder
- 1 tsp garlic powder
- 1 tsp cumin powder
- 1 tsp ground coriander
- 400g chopped tomatoes
- 1 tin cannellini beans
- 1 tin kidney beans
- 1 pepper, diced
Instructions
Method:
1. Brown the sausages under the grill or in a frying pan to give them some colour, as they won’t get any in the slow cooker.
2. Place all of the ingredients into the slow cooker and cook for 8 hours on the low setting or 4 hours on the high setting for a faster cooking time.
3. Slice the sausages, then serve with rice, sour cream and a sprinkling of chopped chillies and coriander.
Chefs tip:
Any sausages will work for this.
