Sausage Fried Egg and Spicy Chilli Ketchup Breakfast Taco Pancakes

Ingredients

  • For The Chilli Ketchup
  • 1tbsp tomato ketchup
  • 6 drops of tabasco
  • 1tbsp maple syrup
  • For The Pancakes:
  • 175g self-raising flour
  • 1tsp baking powder
  • 1tbsp caster sugar
  • Pinch of salt
  • 3 eggs
  • 125ml milk
  • 20g salted butter, melted
  • 50g butter, to cook the pancakes and fry the eggs
  • Salt and pepper to taste
  • 2 Cumberland sausages
  • 1tbsp vegetable oil, to fry the sausage
  • 2 eggs
  • 1 green chilli, sliced
  • 1tsp chives, chopped
  • 2tbsp chilli ketchup

Instructions

Method

  1. To make the chilli ketchup, combine the ketchup, tabasco and maple syrup and keep to one side.
  2. To make the pancakes, place the flour, baking powder, caster sugar and a pinch of salt in a bowl.
  3. Whisk together the eggs and milk and carefully mix into the flour until a smooth pancake mix forms.
  4. Add the melted butter and heat up a non-stick frying pan.
  5. Melt a knob of butter in the pan and pour a small ladle full of pancake batter in the centre and cook for 2 minutes until you see a few bubbles on the surface. Flip the pancake and cook for a further 2 minutes.
  6. Repeat the process until you have made all of the pancakes.
  7. Cut the sausage into pieces and fry until golden in a little veg oil.
  8. Fry the eggs and season to taste with salt and pepper.
  9. Fill the pancakes like tacos and garnish with cheese, sliced chillis, chives and chilli ketchup.

Chef’s Tip

Try adding any left-over chopped herbs to the pancake batter mix, like basil or chives for savoury and mint for sweet.
