Pumpkin Pie Martini
Ingredients
- 150g pumpkin, diced
- Handful of ice cubes
- 100ml vodka
- 50ml spiced rum
- 50ml single cream
- 2tbsp maple syrup
- 1/4tsp ground cinnamon
- 1/2tsp vanilla essence
- 2 digestive biscuits smashed into small crumbs
Instructions
Method:
- Simmer the diced pumpkin in unsalted water until tender, drain and liquidise to a smooth purée and allow to cool.
- Half fill a cocktail shaker with ice and add the vodka and rum.
- Add the cold pumpkin purée, single cream, maple syrup, cinnamon and vanilla and shake vigorously for 30 seconds.
- Dip the rim of your glass in a little water and then into the fine biscuit crumbs.
- Pour in the martini and garnish with a cinnamon stick.
Chef’s Tip:
For a non-alcoholic mocktail swap out the vodka and rum for apple juice.
