Ingredients

  • 150g pumpkin, diced
  • Handful of ice cubes
  • 100ml vodka
  • 50ml spiced rum
  • 50ml single cream
  • 2tbsp maple syrup
  • 1/4tsp ground cinnamon
  • 1/2tsp vanilla essence
  • 2 digestive biscuits smashed into small crumbs

Instructions

Method:

  1. Simmer the diced pumpkin in unsalted water until tender, drain and liquidise to a smooth purée and allow to cool.
  2. Half fill a cocktail shaker with ice and add the vodka and rum.
  3. Add the cold pumpkin purée, single cream, maple syrup, cinnamon and vanilla and shake vigorously for 30 seconds.
  4. Dip the rim of your glass in a little water and then into the fine biscuit crumbs.
  5. Pour in the martini and garnish with a cinnamon stick.

Chef’s Tip:
For a non-alcoholic mocktail swap out the vodka and rum for apple juice.
