Milk Chocolate and Caramelised Banana Taco Pancakes
Ingredients
- For The Caramelised Banana:
- 1 banana, sliced
- 1tbsp butter
- 1tbsp maple syrup
- For The Pancakes:
- 125g self-raising flour
- 1tsp baking powder
- 2tbsp caster sugar
- 2tbsp chocolate chips
- Pinch of salt
- 3 eggs
- 125ml milk
- 1tsp vanilla paste or vanilla essence
- 20g salted butter, melted
- To Garnish:
- 50g whipped cream
- 2tbsp chocolate sauce
- 1 crumbled Flake

Method
- To make the caramelised bananas, melt the butter in a frying pan and gently fry the sliced banana until golden, add the maple syrup and keep warm.
- To make the pancakes, place the flour, baking powder, caster sugar, chocolate chips and a pinch of salt in a bowl.
- Whisk together the eggs, milk and vanilla and carefully whisk into the flour mix until a smooth pancake mix forms, then add the melted salted butter.
- Heat up a non-stick frying pan, melt a knob of butter in the pan and pour a small ladle full of pancake batter in the centre and cook for 2 minutes until you see a few bubbles on the surface.
- Turn the pancake and cook for a further 2 minutes.
- Continue to repeat the process until you have made all the pancakes.
- Fill the pancakes like tacos, first add the caramelised bananas then top with a dollop of whipped cream.
- Finally drizzle with chocolate sauce and scatter some crumbled Flake.
Chef’s Tip:
For extra chocolaty pancake batter substitute 25g of the flour for 25g of cocoa powder and follow the same method.
