Harissa Spiced Vegetable and Halloumi Cheese Skewers
Ingredients
- 1 packet Halloumi cheese, cut into large chunks
- 1 small aubergine, cut into large chunks
- 1 large courgette, cut into large chunks
- 1 red pepper, cut into large chunks
- 1tsp salt
- 2 garlic cloves, crushed
- 1tbsp olive oil
- 2tsp harissa spice
- Juice of 1 lemon
- For the dressing
- 1 beef tomato, peeled and seeds removed
- ½tsp harissa spice
- 2tbsp yoghurt
- 1tsp fresh chopped mint
Instructions
For the skewers, salt the chunks of aubergine for 20 minutes, then wash and dry on kitchen roll. Blanch the courgette in boiling water for 20 seconds and leave to dry in it’s own steam. Place the courgette, aubergine, pepper and halloumi into a bowl. Then add the crushed garlic, harissa spice, parsley, lemon juice and olive oil, mix well and leave to marinate for at least an hour. Thread the chunks of halloumi, aubergine, courgette and pepper onto wooden skewers then cook, ideally on the barbecue. These can also be cooked under a hot grill, for about 5 minutes either side.
For the dressing simply mix the ingredients together and serve with your skewers. Try with some cous-cous for a perfect combination.
TOP TIP
To peel a tomato, make a little cross in the skin, place into a pan of boiling water for 20 seconds, re-fresh in cold water and the skin should peel off easily
