Croque Madame
Ingredients
- 4 slices of fresh Artisan bread
- 1tbsp olive oil
- 1 garlic clove
- 4 slices of York ham
- 50g Gruyere cheese
- 2 free-range eggs
- For the cheese sauce
- 25g butter
- 25g plain flour
- 500ml milk
- 4-5 dashes Worcestershire sauce
- 1tsp Dijon mustard
- 1 egg yolk
- 100g Gruyere cheese
- 1tsp fresh-snipped chives
Instructions
- The first stage of this recipe is to make the cheese sauce. Place the milk into a microwavable jug and warm through. Melt the butter in a small saucepan; mix in the flour with a wooden spoon.
- Over a low heat slowly add the milk little by little whilst continually mixing until you have a lovely glossy white sauce.
- Stir in the remaining ingredients and leave to cook over a low heat for 3-4 minutes, stirring every so often. Remove from the heat.
- Place a griddle pan over a medium heat. Brush the olive oil over both sides of the bread and griddle until nicely charred.
- Pre-heat the grill. Place the ham and gruyere over two of the slices and pop under the grill until the cheese begins to melt.
- Pop the other slices of griddled bread on to sandwich together. Place onto a tray, spoon over some of the cheese sauce and place under the grill until golden.
- Meanwhile fry a couple of eggs and serve on the croquet monsieur with a scattering of fresh chives.
