Ingredients

  • 1 pack Booths boneless thighs or drumsticks
  • 1 small pack smoked bacon lardons
  • 1 onion, diced
  • 1 celery stick, diced
  • 1 large carrot, diced
  • 1 pack leek and potato soup mix
  • 1 litre chicken stock
  • 3 bay leaves
  • 1/2tsp dried thyme
  • Salt and pepper to taste

Instructions

Method:

  1. Season your chicken with salt and pepper then add them to the slow cooker with the bacon lardons, diced onion, celery and carrot.
  2. Add the Booths leek and potato mix and then the chicken stock.
  3. Add the bay leaves and thyme and cook in the slow cooker on low for 6-8 hours. Perfect to put on early and it’s ready when you get home from work!
  4. Season to taste with salt and pepper and serve with buttered crusty bread.

Chefs Tip

For an authentic finish add a handful of chopped dried prunes.
