Cock A Leekie Soup
Ingredients
- 1 pack Booths boneless thighs or drumsticks
- 1 small pack smoked bacon lardons
- 1 onion, diced
- 1 celery stick, diced
- 1 large carrot, diced
- 1 pack leek and potato soup mix
- 1 litre chicken stock
- 3 bay leaves
- 1/2tsp dried thyme
- Salt and pepper to taste
Instructions
Method:
- Season your chicken with salt and pepper then add them to the slow cooker with the bacon lardons, diced onion, celery and carrot.
- Add the Booths leek and potato mix and then the chicken stock.
- Add the bay leaves and thyme and cook in the slow cooker on low for 6-8 hours. Perfect to put on early and it’s ready when you get home from work!
- Season to taste with salt and pepper and serve with buttered crusty bread.
Chefs Tip
For an authentic finish add a handful of chopped dried prunes.
