British broad beans

Unzip a fresh broad bean pod with your thumb and you’ll find delicious, green-tasting beans, with a creamy texture, nestled inside. Ours come from Andrew Green, who grows beans at the foot of the Malverns in Herefordshire, and they’re only available for a short time. Smaller beans are sweet as they are, but larger ones are at their best when they’re blanched and slipped out of their skins. Try them in a summer vegetable risotto or pilaff, or in a salad with crumbled feta.
